Generations of Flavor carrots

This soup is a hit with my kids! It’s super flavorful and smooth, and it brings back happy memories of my childhood. My mom used to make it for me all the time, and now I love making it for my own family.

The original recipe used milk to make it creamy, but my lactose-intolerant child can’t have that. So, I’ve found that using vegetable broth instead actually makes it taste even better!

You can customize this recipe however you like, to fit your own tastes and dietary needs. Whether you want to use milk or veggie broth, the important thing is the delicious flavor that’s been passed down through my family for generations. Have fun making it your own!

  • 18 medium-sized carrots peeled and sliced
  • 1 1/2 cups Prego sauce or any tomato sauce you like
  • 4 liters vegetable broth
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Water as needed for the right thickness

  • Peel and chop those carrots into rounds or chunks, making them all about the same size for even cooking.
  • In your Instant Pot, toss in the sliced carrots, your chosen tomato sauce, vegetable broth, garlic powder, salt, and pepper.
  • If it looks a bit thick, add water to get it just the way you like it.
  • Seal up the Instant Pot, set it to manual, and let it cook on high pressure for about 10 minutes.

Stovetop Method:

  • If you're using the stovetop, throw the carrots, tomato sauce, vegetable broth, garlic powder, salt, and pepper in a pot.
  • Add water if it needs it to hit that perfect soup consistency.
  • Bring it to a boil, then drop the heat and let it simmer for around 20-25 minutes until those carrots are tender.
  • Grab an immersion blender and blitz everything up until it's nice and smooth. If you don't have one, transfer it to a blender in batches.
  • Taste it and see if it needs a little more salt or pepper. Adjust it until it's just right.
  • Give it a little extra pizzazz with a drizzle of olive oil or some fresh herbs.

Tip: Make a big batch and portion it into containers, whether they're 1 liter or your preferred size. Pop them in the freezer, and you've got a stash of wholesome soup ready to go whenever you need a comforting, hassle-free meal.
