Ingredients
  

  • 4 salmon fillets
  • 2 tablespoons maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon lime pepper seasoning
  • 1 cup couscous
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1/4 cup dried cranberries
  • 1/4 cup fresh parsley chopped
  • Salt to taste

Instructions
 

Prepare the Salmon:

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix together the maple syrup, lime juice, and lime pepper seasoning.
  • Place the salmon fillets on a baking sheet lined with parchment paper.
  • Brush the maple-lime mixture over the salmon fillets.
  • Season with salt to taste.
  • Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

Cook the Couscous:

  • While the salmon is baking, bring 1 1/4 cups of water to a boil in a medium saucepan.
  • Stir in the couscous, cover, and remove from heat.
  • Let it stand for 5 minutes, then fluff with a fork.

Steam the Broccoli:

  • Steam the broccoli florets until tender-crisp, about 3-4 minutes.

Combine the Couscous and Vegetables:

  • In a large bowl, combine the cooked couscous, steamed broccoli, olive oil, dried cranberries, and chopped parsley.
  • Toss everything together until well mixed.

Serve:

  • Plate the couscous mixture and place a salmon fillet on top of each serving.
  • Garnish with additional parsley if desired.
