- 1/4 cup whole grain flour such as whole wheat, rye, or spelt
- 1/4 cup filtered water at room temperature
Instructions
- Day 1: In a clean glass jar or container, combine 1/4 cup of whole grain flour with 1/4 cup of filtered water. Stir until well combined to form a thick paste.
- Day 2: You may not see much activity yet, but discard half of the mixture (about 1/4 cup) and then add another 1/4 cup of whole grain flour and 1/4 cup of filtered water. Stir well to combine.
- Day 3: By now, you may start to see some bubbles and fermentation activity. Again, discard half of the mixture (about 1/4 cup) and then add 1/4 cup of all-purpose flour and 1/4 cup of filtered water. Stir well to combine.
- Days 4-7: Continue with the same process of discarding half of the mixture and feeding it with equal parts of all-purpose flour and water every 24 hours. For each feeding, discard half of the starter (about 1/4 cup) and then add 1/4 cup of all-purpose flour and 1/4 cup of filtered water. Stir well to combine.
- After Day 7: Once your sourdough starter is mature and active, you can store it in the refrigerator. Feed the starter once a week by removing it from the refrigerator, discarding half, and then feeding it with 1/4 cup of all-purpose flour and 1/4 cup of filtered water. Allow the starter to come to room temperature before using it in recipes.
- Storage: Store your mature sourdough starter in the refrigerator in a loosely covered container. If you plan to bake frequently, you can keep it at room temperature and feed it daily.
