Sharing My Tried-and-Tested Gluten-Free Pancake Recipe!

I wanted to share a fantastic gluten-free pancake recipe that I've been working on. I crafted my own flour mix using rice and oat flour, and the result is truly amazing – moist, soft, and with a delightful taste that even picky eaters will love.

Ingredients
  

  • 2 cups Gluten-Free Flour Mix I used a blend of rice and oat flour
  • 2 eggs
  • 2 to 3 cups milk or alternative I prefer Soy milk
  • ¼ cup Canola Oil
  • 3 tbsp Brown sugar
  • 1 tsp Xanthan Gum I use Bob's Red Mill
  • 1 tbsp Vanilla extract

Instructions
 

  • In a mixing bowl, combine the gluten-free flour mix, eggs, Soy milk, canola oil, brown sugar, xanthan gum, and vanilla extract.
  • Whisk the ingredients together until you achieve a smooth batter consistency
  • Heat a pan or griddle over medium heat and lightly grease it with oil.
  • Pour the batter onto the hot surface, using approximately 1/4 cup for each pancake
  • Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  • Serve with your favorite toppings and enjoy your delicious gluten-free pancakes!
