Gluten-Free Chocolate Cake
Ingredients
- 1 cups sugar
- 1 3/4 cups gluten-free all-purpose baking mix Check my GF Mix flour recipe
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Preheat Oven: Heat oven to 350°F. Grease two 9-inch round baking pans and dust with cocoa powder.
- Prepare Batter: In a large bowl, stir together sugar, gluten-free baking mix, cocoa, salt, baking powder, and baking soda. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into prepared pans.
- Bake: Bake for 35 to 40 minutes or until a wooden pick inserted in the center comes out clean. Cool for 5 minutes; remove from pans to wire racks. Cool completely before frosting with “Perfectly Chocolate” Chocolate Frosting.
Garnish:
- Add your choice of garnish, such as chocolate shavings, fresh berries, or a sprinkle of powdered sugar.
