- 2 cups Blueberries
- 1 1/4 cups all-purpose flour
- 1 stick unsalted butter +4 Tbsp softened extra for greasing
- 1 cup brown sugar
- 1 piece lemon finely grated zest
- 1 tsp baking powder
- 1/2 tsp salt
- 3 tbsp milk
For the Streusel Topping
- 1 cup all purpose flour
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 6 tbsp unsalted butter diced
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with butter.
- In a bowl, combine the streusel topping ingredients – flour, brown sugar, cinnamon. Cut in the softened butter using a fork or pastry cutter until crumbly. Set aside
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.Add the lightly beaten eggs and lemon zest, mixing well.In a separate bowl, whisk together the flour, baking powder, and salt.Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.Gently fold in the blueberries.
- Spoon the cake batter into the greased cake pan, spreading it evenly.
- Sprinkle the prepared streusel topping over the cake batter.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
