Ingredients

  • 10 Large eggs
  • 1 L Milk
  • 1 tbsp Vanillla extract
  • 1 cup Sugar

Instructions

Prepare the Caramel

  • In a small saucepan over medium heat, melt the granulated sugar. Stir occasionally until the sugar melts completely and turns into a golden-brown caramel.
  • Quickly pour the caramel into the bottom of a 9-inch round baking dish, ensuring it coats the entire bottom evenly. Allow it to cool and harden.

Preheat your oven to 325°F (163°C).

    Mix the Custard

    • In a mixing bowl, whisk together the eggs until well-beaten
    • Add the sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Continue to whisk until the mixture is smooth and well combined.

    Pour the Mixture:

    • Carefully pour the custard mixture over the hardened caramel in the baking dish.

    Create a Water Bath

    • Place the baking dish in a larger baking pan.
    • Fill the larger pan with hot water until it reaches about halfway up the sides of the flan dish. This creates a water bath for even cooking.

    Bake

    • Bake in the preheated oven for approximately 45-50 minutes or until the flan is set. You can check for doneness by inserting a toothpick into the center; it should come out clean.

    Chill

    • Allow the flan to cool to room temperature before refrigerating it for at least 4 hours or overnight.

    Serve

    • Once fully chilled, run a knife around the edges of the flan to loosen it. Place a serving platter upside down on top of the baking dish and flip it over to release the flan.

    Enjoy

    • Enjoy your homemade classic flan!

    Notes

    1. Caramel Consistency:
      • Pay attention to the caramel's color while melting; it should be a rich golden-brown for the perfect flavor. Be cautious not to let it burn as it can impart a bitter taste.
    2. Water Bath Tips:
      • The water bath ensures gentle, even cooking. Carefully add hot water to the larger pan before placing it in the oven. This method prevents the flan from cracking during baking.
    3. Custard Mixture:
      • Whisk the custard mixture thoroughly to ensure a smooth texture. The combination of sweetened condensed milk and evaporated milk provides the classic richness of flan.
    4. Baking Time:
      • Keep an eye on the flan during the last few minutes of baking. It should be set with a slight jiggle in the center. Overbaking can lead to a firmer texture.
    5. Cooling and Chilling:
      • Allow the flan to cool at room temperature before refrigerating. This gradual cooling helps prevent cracking. For the best results, refrigerate for at least 4 hours or overnight before serving.
    6. Unmolding the Flan:
      • Loosen the edges of the flan with a knife before flipping it onto a serving platter. Hold the platter firmly against the dish and invert it quickly to release the flan with the caramel on top.
    7. Flavor Variations:
      • Experiment with additional flavors such as cinnamon or citrus zest in the custard mixture for a unique twist. Fresh berries or a dollop of whipped cream make delightful accompaniments.
    8. Storage:
      • Store any leftovers in the refrigerator, covered, for up to 3-4 days. The flavor often intensifies over time, making it even more delicious on the second day.
    9. Serve Chilled:
      • For the best taste and texture, serve the flan well-chilled. The cold temperature enhances its creamy consistency and allows the caramel sauce to set beautifully.
